Tomato Balsamic Salad

There's nothing better than fresh garden tomatoes, I love to make a quick tomato salad with them. This tomato salad is super fresh and very tasty! You can add to it or keep it simple. Now that falls rolling in and figs are ripening they make a great addition to this salad. You can also add your favorite nuts in, walnuts and pine nuts taste great in this mix. You can really get creative with it! Hope you guys enjoy!

Recipe:

  • 10-15 tomatoes (a mix of cherry, and grape tomatoes)

  • 4 oz fresh mozzarella

  • Balsamic Glaze

  • Pesto (¼ cup olive oil, ¼ cup chopped parsley, 2-3 chopped basil leaves, salt and pepper)

Directions:

  • First, the pesto, you can either chop the parsley and basil and add it to the olive oil, salt and pepper to taste and allow it to sit while you prepare the rest. Or you can use your blender and blend it all up and allow it to sit while you make the rest.

  • Next, slice your tomatoes in half, and place them in the bowl.

  • Then cut the fresh mozzarella into bite size pieces, add to the mix.

  • Then drizzle the pesto over everything, and then drizzle the Balsamic glaze on top and Enjoy!
