Sourdough chocolate chip cookies

They're a classic for a reason, these sourdough chocolate chip cookies are so cozy and delicious, they'll have you making double batches!


Ingredients:

  • 355g flour

  • 6g baking soda

  • 4g salt

  • ¼ tsp cream of tartar

  • 226g softened butter

  • 180g turbinado sugar

  • 80g brown sugar

  • 125g semisweet chocolate chips

  • 100g chopped walnuts

  • 1 egg

  • 125g active starter

  • 12g vanilla 

  • 1 tsp almond extract (optional)

  • Coating:

    • 100g sugar


Directions:

  1. In kitchen aid or with hand mixer, cream the butter, turbinado sugar, and brown sugar

  2. Add the egg, vanilla, almond extract and active starter- mix until fully incorporated

  3. In a separate bowl combine all of the dry ingredients: flour, baking soda, salt, and cream of tartar - mix - and then add slowly into the wet ingredients until fully incorporated.

  4. If the dough is sticky add 5-10g more flour

  5. Mix in the chocolate chips and chopped walnuts

  6. Grab a parchment lined pan, and a scale, scoop 60-65g chunks of dough, and form into thick puck shapes, slightly flat

  7. Roll the pucks in the white sugar and place on the pan,

  8. Move the pan with the dough pucks into the fridge for 1-2 hours

  9. Once ready to bake, preheat the oven to 350℉ and bake the cookies about 2 inches apart for 15-17 minutes, until the edges are set and centers look soft.

  10. Let cool for 5 minutes before moving over to a cooling rack to finish cooling/setting
